Skirt Steak
I have always wanted to try making skirt steak, but then you hear people not wanting to fix it because of how tough it is, plus being a cheaper cut of meat. They talk about not grilling it because it dries it out.
Since I don't have a grill I decided to try a recipe for a different one instead the one below, but the one below was in my bookmarks so I thought that I would post this and try it next.
What I did is I took a one and a half pound skirt steak and I marinated in oil soy sauce honey salt and pepper garlic powder and a little chili flake. I put it back in the refrigerator to marinate for about 2 hours. I then heated up a cast iron skillet and then seared it on each side for approximately 3 minutes and took it off to rest for about 5. It sure looked like the picture but the inside was still somewhat very rare. Granted they say that it's best to make this, you know, on the rare side but it was still pretty tough. I even made a wonderful chimichurri sauce for it.
I'll use the rest of it to dress a salad.
Now, in the recipes defense, it said to cut against the grain and I believe that when I sliced it I was cutting with the grain so it's my own fault. One crucial step that I missed ended up resulting in a tougher cut of meat.
So the recipe below will be my next try at skirt steak.
