Artichokes

For years,  I have gone through the produce section looking at vegetables, wondering how do you cook that or what exactly is that. Well, a few years back I finally got the nerve to start grabbing vegetables and looking them up and creating dishes out of them. The artichoke was no different I had no idea what to do with it it looked weird but then one day I was standing in the store and someone was picking them up and I walked right up to them and said okay, how are you going to prepare that?
That person just told me that they boil it in water for about an hour and then scrape the underneath of the leaves off onto their teeth. Thank you for the information I said.
What the heck was that conversation all about? Boil it and scrape it off onto your teeth okay here we go. So I read many sites on how to prepare an artichoke and after a while I became familiar with either cutting this stem off and cutting most of the tip off of the artichoke and either steaming it or boiling it to soften the leaves. To dip the ends of the leaves that come off the artichoke in I would prepare either a melted butter or a prepared horseradish sauce with some mayonnaise to dip them in. I love it that way.
One summer when my grandchildren were here we prepared them for them as a way to have some fun having dinner. About a year later I asked my granddaughter with her favorite food was and she said remember that green thing we had and asked me if we could always have that one they come over. I was tickled pink. Well I have another link here that I've always wanted to try because I have a few cans of have artichoke hearts and I want to prepare them as a side dish and today is going to be that day. Something totally different and out of the ordinary of the old way of preparing a food I like.
The link below talks about roasting these and at the end tossing them in a panko type breading. I can't wait. These book marks that I kept for later are paying off.

I'm almost under 1800 bookmarks though. I keep finding some that go invalid, but that's okay because retirement has its perks. I can take my time going through them.

Enjoy the next recipe.

By all means if you have a favorite way to prepare them, please let me know.

For now, have a great day and a better one tomorrow.
