Cinco de Mayo
Well, instead of breaking out the bookmarks today I'm going to use a link instead of trying to find a bookmark for today because I want to do something a little special. I want to stay home and have dinner because it's raining outside and I want to make some homemade enchiladas. They always turn out good but I do use store-bought flour tortillas. Today I'm making my own looking for an easy recipe and the recipe below just fit the bill. I've never made tortillas and these came out just fine
I'm not going to say too much today because I have things to do, but I'm telling you my friend said these look great.
Happy Cinco de Mayo everyone. Who doesn't like this kind of food? I'll pair it with the margarita for dinner.
